Protein-Packed Breakfast Cookies
- 1/2 cup water
- 2 scoops (2 Tbsp) OLLY Plant Powered Protein, Velvet Vanilla
- 1/4 cup cocoa powder
- 1 banana
- 2 Tbsp coconut oil
- pinch salt
- 1/2 cup peanut butter
- 2 cups oats
- 1 egg
- 1/2 cup chocolate chips
- 1/2 cup dried currants (or other dried fruit)
Preheat oven to 325 degrees and line two baking sheets with parchment paper.
In a blender or food processor, blend together water, smoothie powder, cocoa powder, banana, coconut oil, salt, and peanut butter until smooth.
Transfer mixture to a bowl. With a wooden spoon, mix in oats, egg, chocolate chips, and dried currants.
Scoop heaping portions of the mixture out with a 1.5 Tbsp ice cream scoop. Place on parchment paper and shape/flatten slightly.
Bake cookies for about 12 minutes, until slightly firm. Cool slightly and serve!
