Protein-Packed Breakfast Cookies

Ingredients

  • 1/2 cup water
  • 2 scoops (2 Tbsp) OLLY Plant Powered Protein, Velvet Vanilla
  • 1/4 cup cocoa powder
  • 1 banana
  • 2 Tbsp coconut oil
  • pinch salt
  • 1/2 cup peanut butter
  • 2 cups oats
  • 1 egg
  • 1/2 cup chocolate chips
  • 1/2 cup dried currants (or other dried fruit)

Instructions

  • Preheat oven to 325 degrees and line two baking sheets with parchment paper.

  • In a blender or food processor, blend together water, smoothie powder, cocoa powder, banana, coconut oil, salt, and peanut butter until smooth.

  • Transfer mixture to a bowl. With a wooden spoon, mix in oats, egg, chocolate chips, and dried currants.

  • Scoop heaping portions of the mixture out with a 1.5 Tbsp ice cream scoop. Place on parchment paper and shape/flatten slightly.

  • Bake cookies for about 12 minutes, until slightly firm. Cool slightly and serve!
